Best ever beer cheese soup! Not too thick or too thin or too cheesy. Followed the directions and it was perfect for lunch; my husband wants more for dinner. This recipe is a keeper.

I read your description that this was “restaurant quality”, so I was thinking local sandwich shop good. Girl….this is fine dining, amazing flavor! I was commenting how good it was with each bite.

This was fun and easy to make! I used up our last bottle of artisan beer and supplemented the cheddar cheese with a little gouda since I didn’t have enough cheddar. There wasn’t any half-and-half in the frig and I didn’t feel like running to the store so I used whole milk, and it still turned out quite rich. The blend of flavors sent this soup over the top and we will definitely make it again. I may also experiment with an immersion blender to cut down on the onion chunks, although we personally like a few pieces of (cooked) onions in our food! Since you mentioned that it can be frozen, I’m planning on making some and doing that since it would make a great first course for a special meal.

I made this for my parents and this next time the came to visit they requested it again!! It is one of my all time favourite soup recipes! Now if I can only remember the garnish at the end before everyone dives in and it’s gone
