When I say this recipe is good, I mean it is the-best-ever-soup-of-my-life. I stumbled upon this recipe when looking for a cozy comfort soup for fall. I’ve always loved soup ever since I was a little girl. I feel like soup is often overlooked. My grandma made some of the best vegetable soup ever, but there was another soup she made that always screamed comfort and delicious to me: potato soup. Her soup was more simple than this, but this gives me the same feeling plus some. It’s delicious! I stumbled upon the cozy cook’s recipe and decided to go for it. The bacon is a must because it gives such good flavor!

My husband also said how great it was. I happily enjoyed leftovers for days and here I am, 2 weeks later, making this recipe again tonight! Since then, I have made a few other recipes from the cozy cook (the best lasagna recipe ever). As others have stated, the seasoning is spot on in these recipes, which is hard to do since seasoning is relative to the cook. I didn’t have to change or add a thing.

This recipe is a little more involved and would be fun to cook with your spouse or family, but you can do this by yourself too. You need to make this! 😋

VERY good recipe and I plan to make it again. The only difference I did was I had some homemade chicken stock that I had in the freezer that I used instead of store bought broth. Makes it easier for me to control the amount of salt going into any soup. I’ll need to make some more stock to make this again, very soon. Thanks

Hi Alex!! I’m so happy that you enjoyed it! If your onions and carrots were nice and soft but the celery wasn’t, perhaps dice it a little finer next time and it’ll cook through at the same rate as the other veggies in the mirepoix! 🙂 Thank you so much for sharing how it came out!

Came out amazing! Added some extra salt and pepper and celery was a bit harder than expected but should be fine after sitting a bit!
