This recipe is so ridiculously good.

Hi Ellen, you just want to sprinkle the surface with salt (not cover it with salt). The amount depends on the surface area and thickness of the pork, which can vary. I do a light to moderate sprinkle over the surface and rub it in.

This was really good! We had no wine, so added a little extra chicken broth, and served it over mashed potatoes. My husband appreciated that the mushrooms are large enough that he could see them and pick them out. He’s not a fan of mushrooms…clearly, that doesn’t stop me from using them because more for me! Ha!
