I have altered this recipe to easily be deliciously plant based. So easy to replace dairy/meat ingredients with vegan alternatives. For example replace the butter for a vegan alternative, I then used a pack of Vivera chicken fillets (from UK supermarket), sliced and fried but I imagine any other VG alternative would work too. With the chicken stock, just use oxo meat free chicken stock cubes and et voilà! 

Such a delicious wholesome meal which myself and meat-eating husband loved!

I’m so happy that you enjoyed it Rachel!! 🙂 Adding the broth in increments gives you control over how much liquid you end up having in the filling, you don’t have to add it all! Also, the longer it simmers, the more liquid evaporates and the thicker it gets! I love that you used fresh veggies, that sounds so good!! Mine turned out a little runny but I didn’t cook my veggies separately, but added them to the broth once I removed the chicken and whisked the flour in. Also used fresh veg instead of frozen. Will definitely make this again but adjust the last broth quantity 🙂 I’ll say it again, fantastic recipe Stephanie thank you 🙂
