I finally made this, and it was wonderful. I pretty much followed the recipe except used fresh carrots that I pre-cooked a bit. I pre-cooked the rice and chicken and kept them refrigerated until the next day when I put everything together and cooked according to directions. It saved some time to pre-cook ahead, and I learned green onions are a must to add just before serving. Another keeper from the Cozy Cook! 😀
