Hi Wendy! The longer it simmers, the thicker it gets, but I wouldn’t call it stew (though I do have an excellent Beef Stew recipe). The reason I like to serve it with potatoes or biscuits is because the soup itself doesn’t have starchy ingredients like potatoes, rice, barely, etc.

My husband and I both give this 5 stars.  Thank you!  One of the things I love about making soups is how easy they are to tweak based on preferences of family members.  We really enjoyed serving this over mashed potatoes, as you do.  It was a great meal!

A lot of the ingredients are those that are used in tater-tot casserole. So, heated up some mini seasoned tots in the air fryer and served it over that. Very tasty. I sous vide a 2lb round steak for 6 hours and then dusted it with some flour and seared it. Left a very nice fond and the steak bits were very tender.

It’s a blustery, cold day here in Seattle. Perfect day for a hot, hearty soup. I used canned veggies because that’s what I had online. I’ll make this soup again, for sure.

made this today for dinner tonight and the kitchen smelled so good! The soup was delicious and rich in flavor…..i put it over mashed potatoes, yum, and tomorrow I’ll just have it as soup! There’s so much here, I’ll be sharing with a neighbor.
